I scream for Jaffa Ice-cream

Lately, as I've told you, I've been eating a lot of ice-cream at work, but that doesn't mean I don't get to do it at home as well. I never can't get enough ice-cream and I like to create new flavours based on popular products. This time I played with Jaffa Cakes.












Jaffa Cakes are not cakes, but a very popular british cookie. They're so popular and loved in UK that they have a lot of Jaffa flavoured stuff and even have their own Jaffaholics club. The cookies have a sponge cake-like base covered with orange marmelade and topped with dark chocolate.


To recreate the cookie in the form of ice-cream I started with a blank canvas (aka white ice-cream base) and then strongly flavoured it with orange. You could do this with any custard base ice-cream recipe you have, but I decided to leave the eggs out of the way so the orange flavour could be stronger. Eggs can be overpowering sometimes, specially over citrus.

Then at the end of churning I added a lot of chopped Jaffa Cakes and very small chunks of dark chocolate. Et voilá!










JAFFA ICE-CREAM



  • 500 ml milk
  • 180 ml cream
  • 100 gr (4.3 oz) sugar
  • 50 gr (1.8 oz) glucose
  • 25 gr (1.8 oz) powdered milk
  • 2 tbsp orange marmelade
  • 1 orange (grated rind)
  • 3 tbsp orange licor (I used Cointreau)
  • 1 cup chopped Jaffa Cakes
  • 1/2 cup dark chocolate chunks

On a pan take to the stove the milk, cream, orange rind, sugar, glucose, powdered milk and marmelade. Stir until the sugar, glucose and powdered milk are dissolved. Don't let it boil and let it cool completely (It's better if you do this the day before churning).

When you're ready strain it to discard the rind and churn in an ice-cream machine. Just when it's almost ready add the orange licor, Jaffa Cakes and the chocolate chunks. Don't over churn, take it out of the machine as soon as everything is well distributed. Store in the freezer.
